Thanksgiving is a great time for families to gather and share a meal. Deep fat fryers to prepare the turkey is the chosen cooking method for many families. When the cooking goes right, the results are spectacular. When the cooking goes wrong, the results can be devastating.

Turkey Frying Safety

  • Check your equipment before starting. Many turkey fryers are used occasionally, so be sure the burners are clean and free of any dirt or debris. Check the LP tank and fuel line. Spray soapy water on the connections and look for bubbles that would indicate a fuel leak. Make sure you have enough fuel for the entire cooking process. Have an ABC fire extinguisher available. Do not use your garden hose, oil and water do not mix and will spread the fire.

  • Select a safe area to set up your turkey fryer. A non-combustible surface that is located away from any combustible surface on your home. This means that using a deck as the cooking location is a bad idea. You need to limit access to the cooking area for the entire process.

  • How much oil is needed? This is based on the weight of your turkey. Place your turkey in the cooking vessel and fill with water to the desired level. Remove the bird and that is the amount of oil you need. Overflowing oil will ignite, and your Thanksgiving will get stressful.

  • Thaw the turkey and season with your choice of flavors. Dry the turkey exterior. A wet or frozen bird will cause oil and water to overflow and catch fire.

  • Lower the bird using a glove to protect your hand and use the tool provided by the fryer manufacturer. Dropping the bird will splash hot oil and create a hazard.

  • Monitor the oil temperature with a thermometer. This is good cooking practice and will prevent you from overheating, which can cause a fire. Low temperature that can lengthen cooking times and allow more oil to soak into your turkey.

  • Monitor the turkey temperature with a meat thermometer to measure doneness.

  • After cooking, shut off the fryer fuel and let the oil cool. Keep everyone away from the fryer to avoid turning it over causing injury. Once the oil is cool you can drain the fryer and dispose of the oil or recycle it for your next cook.
